People should not quote the entire post when replying.

Another advantage is that people often quoted the entire post and then wrote their reply within the quoted text. I would have to edit the post to take the response outside the quoted text.

It does exist.

It fills up the post with content which is usually just not relevant.

I often don't know if the quoted post is relevant and have to unfurl it to read it.

Why is it user unfriendly the way it is?

To reply, just start typing in the box.

Edit: This post is an example of why it is better. I was "forced" to select the relevant bit of your post to quote to reply to.
If I had hit reply, anyone reading my post, would have to read your entire post again.
 
really think removing the quote and reply buttons makes the forum far less user friendly and is solving for a problem that doesn’t really exist.
My first thought when I saw the change was that the thread I was reading had been closed to replies. I'd guess a new user (even one familiar with other forums) would think the same.
 
To quote some text , highlight that text and the Reply button will appear e.g.
