Shrove Tuesday: How do you make pancakes?

Make your batter the night before!

Here's how I make it (no measurements, sorry).
roughly one cup of flour for each egg, (I use 3 eggs usually - makes plenty). Mix up the flour and eggs, keep mixing until you have a smooth, sticky paste. Add milk until you get a liquid that is about the thickness of double cream (add the milk in small batches to avoid lumps).

Leave overnight.

Ideally you need a pan with a very heavy base, put a drop of oil/lard in (butter will burn), and super heat! Pour your batter in to cover the bottom of the pan. Toss the pancake, retrieve from the floor and cook the other side.

Stuff yourself silly - I like cream, honey and lemon on mine.
 
Add a tablespoon or so of melted butter to the batter to prevent them sticking. They will also taste better!

if its convienence you're after, get the ready mixes currently in all the supermarkets, Aldi's one is fine, just add milk, shake and away you go, less than a euro will give you say, 8 8" pancakes, don't forget your lemon juice!!
 
If you like pancakes during the year, lidl are getting in waffle makers this week, simple to use, look great for desert - just a scoop of icecream or some fresh fruit pieces on a wooden scewer gently warmed on the barbacue, some cream or fruit coule on waffle/pancake, place fruit scewer on middle and roll and pull out scewer - heaven!
 
I LOVE pancakes!!!
I don't think you can beat jsut plain old lemon and sugar.
I don't roll them up, I eat them flat, my logic for that is that they last longer that way!
Mmmmm, can't wait to get home this evening to start the flipping!!!

They mentioned on telly this morning that its very important to whisk the batter again after letting it sit.

Has to be golden syrup rather than honey. The extra calories make it taste better :D

Next day, lunch with leftovers with filling of smoky bacon, cheese, tomato & egg.

Vanilla, I reserve particular ire for you - my gut is rumbling in delirious anticipation of the next-day pancake ;) . Do you ship them from Kerry??

Controversial SueEllen. I say stick with the honey. I should have mentioned that your pancakes must be thin, none of those thick American-style pancakes people!
 
Is today Pancake Tuesday? *******PANIC***** Mind you, I've never found making pancakes out of just-made batter to be any worse than if (unusually) I've let it sit. The main thing is very very little oil, and make them thin. I was so disillusioned the first time I ordered pancakes in New York! Gues I should call mine crepes.

bit late but it had to be said.......next day pancakes with smoky bacon!!! JP will be turning in his grave!!!!! (assuming you are RC - are there the same rules for the others?)

Ha ha, I don't even make them myself, never mind ship them...making crepes is Mr.V's job.

As for Ash Wednesday, we had our crepes at the weekend, but I don't really believe God cares whether or not I abstain from red meat on Ash Wednesday. But who is JP?

What leftovers???? Am such total savage that I always devour all mine and never have any left for next day
