The simple answer to your question is yes.
The not so simple part is depending on the structure of your conservatory and having the new roof load properly supported so that your conservatory does not burst at the seams.
The problem with a standard roof is the weight of the members. The timber, battens and tiling all add up quickly, putting strain on the structure.
To be honest this is not really a DIY opportunity as when you remove the roof, usually you need to place a steel wallplate detail to stop the new roof from spreading, this wall plate will need to be supported as conservatory PVC or aluminium is generally not able to carry the roof weight.
Frame up the roof, windproof fabric, battens, roof windows and I would suggest a light weight slate such as as being the best way to minimise the roof load. This would be my choosen method of doing it. Ideally a visit from a competent contractor would allow you make a decision on how viable a project it is.
