Suppose the name I wanted to put on the company was "Irish Fibre Solutions", but now must change it to "IFS Irish Fibre Solutions", does all my future paperwork (eg letterheads, invoice headers) have to have "IFS Irish Fibre Solutions" or can I just put down "Irish Fibre Solutions" instead?

You can create the company with one name, then add a business name registration (€20 via the CRO) and use it for day to day operations and communications.
