I need to do more with my website (or maybe I should say make it do more for me) and wonder if anyone can recommend a practical short course (a sort of dummies guide to SEO) which give me a good basis to work from.

It depends how much time you have to devote to this.

There are several online resources which would give you plenty to start with, but I'm not sure if an actual course would be of much benefit.

In any case the IIA (http://www.iia.ie) and IT@Cork (http://www.itcork.ie) run seminars from time to time and they usually aren't expensive
