Suggestions for special 2 course veggie recipe

Want to surprise Ms Caveat with something home cooked and special this weekend. I'd like to avoid the typical (nut roast, veggie risotto etc)

Any suggestions for a nice starter and main course?

We both like virtually everything...

Starter:
Involtini di Melanzana

* Get a couple of large aubergines and cut slices downwards (ie long slices). You are aiming to get about 3 or 4 good long slices. They shouldnt be too thick as you'll be rolling them.
* Remove skin.
* with a pastry brush (or back of spoon if you dont have a pastry brush), brush with oil.
* Roast in oven or grill/ 10 mins at most - dont burn!
* take them out and cool
* Get a good deli goats cheese or ricotta (depending which she prefers - its meant to be with goats cheese but not everyone is a fan).
* Place a tablespoon of cheese on the aubergine strip and roll it up.
* Place back in oven for another 5 to 10 minutes (till brown and cheese is down - bubbling).
* Serve up with a dollop of with an italian tomatoe sauce ([broken link removed]) on each involtini.

(sorry for vague instructions Ive been making it so long I havent really followed a recipe but if you google "involtini di melanzana" youll find similar versions)

Main course

Risotto. You could do a funghi porcini risotto

I also do a zuchini risotto for my vegetarian friends. I use a leek rather than an onion and then saute in a couple of zuchini. Make the risotto as normal (adding rice, wine and stock slowly to zuchini/leek stiring constantly- follow any risotto recipe) and at the end I add peas and parsley. Its yummy.

Starter sounds good - and she is most definitely a goat's cheese fan!

But I'm afraid Risotto is out (it's a bit of a staple in the caveat house)

We make it - but just more mundanely refer to it as Spinach & feta pie/bake. First time I heard the term TBH.

Funny enough, all of the above we make on a regular basis (except the Italian Aubergine thingy)
 
Thanks again - veggie chilli is another regular (maybe I should have said all this at the beginning :eek:)

...but that's most of our 'standards' mentioned now.

The spinach & ricotta canneloni might be a goer though.
 
If you can get hold of the Cafe Paridiso Cookbook there's some great recipes.

Also the Vegetarian Association have simple ones too.

For any non veggies out there chilli, curry, stirfty & pasta with a sauce are dished up so often to veggies that it gets boring!
 
Myself and every other veggie I know hate Quorn so it might be worth checking first.

As far as we are concerned (veggie + semi veggie - me) it's edible - just.

But certainly not 'special' enough for what I have in mind.

So, so far I reckon Casiopea's Involtini maybe followed by spinach & feta canneloni - although it's a bit close to the spinach & feta pastry/bake that we sometimes do.

...any more ideas?

...and you're right - I've no intention of starting to make pastry at this stage of my life :)
 
Veggie Paella or another ??

Never tried them but they sound lovely!!

Oh the Dunnes "quorn" mince is fab fried with garlic, mushrooms, red onion, mixed peppers and some chili's to taste and then covered in Dolmio extra spicy bolanese sauce, served with couscous, basmati rice or plain old pasta and a fresh salad and some garlic bread...
