Hard one to answer! Depends somewhat on what kind of hotels you want to stay in and what kind of restaurants you like to eat in.

American holidays, tour america and travelagent.ie will give you a quote. You might have to fly from Shannon to make it cheaper. I think you would be looking at in or around €900 per person for a week for flights from Shannon and 3* hotel.

I just booked return flights from Cork for 396euro including taxes etc...a fantastic price I think...esp from Cork...cannot see how you could possibly get any cheaper.
 
As for accomadation...you cannot beat alpharooms.com for price. I swore I would never use them again as I had a bad experience...maybe I was unlucky..its been resolved now.
 
Hotwire for Hotels. Don't go below 4*, there are plenty of bargains in Vegas. Alternatively see what specials come up on travelzoo.com

BTW having been there many times, I think a week is waaaaaaaaaaaaaaaay too long in Vegas. 3-4 days is plenty, the novelty wears off pretty fast. Just my opinion.
 
www.ebookers.ie do some really good deals if you are flexible. You could get a 7 day holiday (flights & accommodation) for as little as €550 (though that may be low range and/or off-strip hotels). You could get mid-range hotels (e.g. MGM & Luxor) on the strip for €650. If you really wanted to splash out you would pay €1000 for the top range hotels (e.g. Bellagio & Venetian)

Depends what you are into. If you love your poker; 7 days is not even enough!!!!!!!
 
For accommodation, just book it when there on hotels.com. For cheap central hotel try tropicana ($40 dollars a night ish for room), accross road from mgm grand. Booking in advance is twice the price.

Using hotwire we've never paid more than $100 per room per night for the Venetian!
