I know there are plenty of ways for students to get visa for short term work in the US but are there any ways for a mature person with a job in ireland full time but long holidays to get such a visa? Or any other suggestions? I'd prefer the US but would consider other places. Any suggestions apreciated. I'm thinking in terms of some sort of income - not voluntary work.

You don't need a permit to work anywhere in the EU/EEA/CH. You also have a legal right to establish a business - in other words: freelance.
Depending on your qualifications and work experience, it is probably possible to get work here in Switzerland short term, even if you don't speak one of the major three national languages. Gaps in the labour market means that employers can be very flexible when it comes to language, pay and conditions.
