Whats the best way to transfer funds from Euros to Canadian Dollars ?

In others words do I have to go to Canada to open a bank account
come back to Ireland and transfer from here?

Do I exchange funds here in Ireland or take a euro bank draft to canada ?

You appear to be asking different questions.

First off you will need the Canadian bank account to be opened, you will have to do that in Canada.

After that you have the choice of doing a wire transfer from your Bank or a company like transfermate or buying a Canadian bank draft and bringing it across for lodgment or posting one across at any time thereafter.
