Replacing wall tiles

I'm about to embark on a tiling spree (or at least a tiler is on my behalf). My main concern however is what needs to be done after I take down old tiles and before I put up new ones. Is it likely that I'll have to bond the wall again or should it be ok? Is it advisable to place a thinn layer of plywood behind the new tiles first gluing it to the wall rather than rebonding? Any tips appreciated.
 
Been there and done that in the bathroom and was advised by my tiler to do the following before he started.

Just remove any loose pieces of old grout with a paint scraper and then polybond to whole surface to seal it and to give the new tiles a good bond.
A good tiler will be able to level the wall surface with enough grout to cover up the old stuff leaving a perfect finish.
