Where to get best offer for top class hotel?

I want to bring my beloved away for 40th birthday. Was planning to stay in Ireland but some of the really nice places cost a fortune, it would be way cheaper to travel (but we want to avoid the hassle).
Anyone know of where I could get a good deal on a top hotel/castle within about 3 or 4 hours of Dublin?
