The Trafford Centre is worth a look - great selection of shops and its not far from Old Trafford.There's also the Museum of Science and Industry, which might sound dull, but is actually quite interesting and would be a good place to spend a few hours if the weather is bad.
Make sure you check out Rusholme as well - AKA the curry mile. Great food as well as giving a good insight into the British Asian community in Manchester. Its a brill place to start off a night out. I can't think of any specific bars or clubs but the nightlife in Manchester is great.
Of course, you could also check out the new Maine Road/City of Manchester stadium!!
