L LMNOP Registered User Messages 76 24 Dec 2007 #4 Absolutely fine to do this. Even better to use very damp kitchen paper over the veg instead of immersing them in water - keeps them moist, but not too wet. Bit of lemon juice keeps them from going brown, if they are that way inclined (eg: apples).
