I'm wondering is there any guidance concerning what name a person should use when registering as a director or signing correspondence? If somebody goes by two names, can they use one on the B10, but sign using the other in letters to members etc. or on the company letterhead? For example, somebody who uses both their married and maiden name.

If the individual is signing in their capacity as a director then they must use the registered name as to do otherwise is misrepresentation, one consequence of which would be to lose the protection of the corporate veil in the case of litigation.
The name on the letterhead must be what is on the CRO file, anything else is again misrepresentation.
