If I am remmiting money to a non-eu country and doing investment and earning interest on that money in that country. Do I need to mention it or pay any tax in Ireland for the income from other country?

If the amounts are large, you need specialist tax advice.
My understanding is that if you are an ordinary Irish tax resident and and also domiciled here - then you are taxed on your worldwide income.
If you are resident here but domiciled abroad, e.g. you might be a non-Irish citizen working here temporarily, you may not be taxable on your overseas income.
But it's a specialist area.
