my employer is offering me a once off payment, as a "gesture", however, she is saying that she is still trying to figure out a tax efficient/tax free way of giving it to me. In my opinion she is just trying to delay it, as she is an accountant and shouldn't she know this, So any ideas that i could suggest to her? It will be in the region of 3K.

An employer used to be able to pay €250 in vouchers (eg one for all) tax free, if that is still the case, to maximise the benifit, then they could pay it either side of the tax year end.

She could pay it nett of tax, so they pay whatever taxes are due and give you what they agreed?

Very few payments/benefits in kind are tax free but you might find some useful info here (at the risk of upsetting those who don't like people posting Google search links...)
