I have decided to switch my current account to another bank. I have either AIB or EBS in mind.

I wont be using apple pay, google pay etc.

I dont want credit card.

I have N26, Revolut, Skrill prepaid cards.

This current account would be used to receive my salary, grocery shopping, online purchases, ATM withdrawals etc. I would be able to keep Euro 2500 at all times.

What makes me lean towards EBS is the lack of any charges, even though the account offers only basic services.

So bit confused whether it would be worth switching to AIB.

Appreciate any advice ...

What is your mortgage situation? Some banks give a reduced rate if your current account is with them as well as your mortgage.
Who is your current account with at present?

There is no harm in setting up an EBS account. I have an EBS account for the reason that they are no maintenance fees, nor day-to-day banking fees. Honestly, I cannot understand why more people don't have an account with EBS. I am not going to ask how much you earn (for obvious reasons), but if it €2,000 or more per month I would advise that you set up a KBC Extra Current Account (plus, who would refuse a €50 welcome handshake). The fees are fully waived if the promise is maintained.
