Sun in February with 2yo

We are planning on going to the sun first week of February with our 2 and a half year old, from either Cork or Shannon. Don't really want to go to Canaries as we've been there so many times and flight is very long for our v active child. Any ideas on mainland Spain or Portugal - would the weather be bad? If so, can anybody recommend a good family hotel with stuff to do for our child?
 
Lots of lovely places in spain and Portugal, but the weather would not be as reliable as the Canary Islands depends on what you are looking for..though you can be lucky just depends..
Praia de Luz and Lagos are lovely in Portugal.. sunset beach in spain is a great hotel/apart
ments for those with kids.. have been quite a few times..
 
Suem001, are the apartments in Sunset Beach very small? They look it in the pictures I've seen. Would we be able to fit a cot in there or would one of us be sleeping on the sofa bed? Also if the weather isn't great, are there facilities in the hotel for kids? Thks
