Special Weekend Break in Ireland for the extended Family

We are celebrating my fathers 60th birthday in early 2007 and would like to go to a nice 4 or 5star hotel for the weekend that would cater for our needs (nice restaurants/activities for all the family). There will be 12 adults and about 7 children. Any recommendations would be greatly appreciated. We are also open to alternative suggestions for the celebration.

What about the lake sin Killarney?

Our family has done this a few times, in The Slieve Russell Hotel in Cavan, The Ferrycarrig in Wexford and The Westport Woods Hotel. All the weekends have been successful but of the 3, I think Westport was probably the best, especially where the children were concerned. The others would be "posher" but Westport was ahead on things to do, places to see and had the best hotel staff in terms of helpfulness and friendliness. Pretty reasonably priced too. Worked out at €1875 last June Bank Hol weekend for 9 adults and 8 children ( 2 night B&B + 1 dinner).
