solid wood kitchen worktop

we have a solid wood worktop in our kitchen, it's cherry wood I think, and the kitchen supplier said that every so often to sand it down and varnish it with danish oil. I did this last night but to be honest the results are disappointing. I hand sanded, put the oil on with a cloth and dried off the excess with another cloth (just like it says on the tin!) but the drier looking bits of the worktop still look a bit jaded. Has anyone any tips? Do I need a belt sander and get right down a few mm's?
 
Woodworkers.ie recommended [broken link removed] to me and I found it to be very good. After a sand and one coat the timber was sealed and looked good. If you have an offcut of your worktop test on this first to see if it gives the results you expect.[broken link removed]
