Sole Trader - VAT thresholds

I am driving school registered as a sole trader. I was part time for the last few years so VAT was never an issue as I was only earning about 15K. Now, I am full time and this year I will probably earn about 40K. I understand I will have to pay VAT on the full 40K .If this is the case l would be better off financially if I take the rest of the year off ! Is there any way to avoid this? I have very few VAT expenses to write off as I understand youcan only claim VAT on diesel ( and not on petrol). Also are driving lessons classed at 21% or 13.5%. And are car hires (pupils hiring my car to sit the test in) classed at 21% or 13.5%.
