Solar Water too hot

Hello

We have an old cylinder in the hot press with a thermostat.
We also have installed solar panels which ar eso effective that the water is too hot on very sunny days.
How can I control the temperture of teh solar heated water in the cylinder.
I would prefer to use that surplus solar energy for something else.
Is the old thermostat of no use in this situation?

What type of solar panels are we talking about?

PV or Water heating?

Yes you can adjust the temperature by using the thermostat on the immersion heater. This is just under the metal or plastic cap.
There is a video here where he shows how the cylinder and thermostat work. Around the 6 min mark is where he shows the thermostat.
