'Seal' tiles over kitchen worktop?

Just getting a job thats been left for too long finished off - tiling kitchen wall above worktops. Had selected mosaic tiles for it and i'm now wondering if this is a good idea given the amount of grease thats likely to get splattered onto that surface. Have heard a little about sealing tiles - should these tiles be sealed immediately?
If so, with what and how is it done?

Go to any DIY shop or builders providers and get a bottle of tile sealer and apply as directed.

you may be better off with tiles rather than mosaic in this area as with all the splashing it could be harder to remove stains on the mosaics
