Rights on working less than 8 hours/week

A community group approached my college to offer asistance on a project. One aspect of the college's input is to provide some students to work on what we've been told is a paid placement within the project.
It will entail about 5/6 hours per week and therefore less than the statutory minimum of 8 hours per week which would entitle us to a wrtitten contract of employment. Hoewever, the relationship between the community project and the college seems to be fairly informal. If I was to propose some form of contractual agreement and this was agreed upon, would it be legally enforceable, provided of course that the terms don't contravene statute or common law?
In this case whom might you suggest is the employer, the college, which has selected us; or the community group; or both?
The placement is a serious undertaking and I just need to ensure that I cover myself.
