Removing Huge Weeds!

My small suburban garden (40ft x 40ft) had flower beds dug at each side and across the back, but I did not get around to planting them last year. They are now a mass of weeds (some close on 6ft high with thick bases). Other than dig them out (massive task) - is there anything else I can do. I am not sure about Roundup and the likes, because I will want to plant the flower beds later. I cut some with the strimmer, but the roots are still there and are thicker than the base of some small trees.

Also, is there anything I should do to stop the weeds reoccurring. They are absolutely huge.

Yes - you can spread weed-control fabric over the flower-beds and this will kill off the weeds above ground and cause the roots to atrophy. Use bark or another mulch to hold it in place. You can make holes in it later to plant through - it will allow water down but stops weeds coming up.
Chop the mega-weeds close to the ground first, but don't put them in your compost heap!

Sold in rolls in garden centres, hardware shops, DIY stores, etc.
