Recommendations on excursions in Dubai

Thinking of going to Dubai on the 1st week of April for 1 week, would like to know what excursions would be recommended?

The Desert Safari or Dune bashing is good fun.... probably a bit touristy but still a great holday experience.

Funny that cos myself and the missus will be there most of that week... we were looking at the indoor skiing seems cheap enough and i'd say it's alot of fun !!
Then maybe a day at the waterpark and swimming with the dolphins..... there seems to be endless amounts of things to do, especially shopping.

Cant wait.
