If i was to install my hot water cyclinder in the attic with the header tank located over it would I have problems? (i.e. air entering the system?)
 
Your main problem will be supplying cold water to the hot tank from the storage tank, this tank will need to be higher than the hot tank. The header tank can be replaced with an expansion vessel as limited head over the hot tank will cause water to expand into the header tank at lower than normal temperatures.

one problem might be insulating the cylinder, attics can get very cold.

Also, is it a "pressurised" cylinder?
