Options for Heating & Hot Water in New Build?

Hi,
I know this is a bit of a broad sweeping question, but I'd appreciate any input on what my various options are for heating & hot water supply in a new build (circa 4K sq ft dormer bungalow)? I hear & read great things about UFH, so very much leaning that way. To narrow the question down then, I'd like to know what my options are in terms of running UFH (oil, heatpumps, pellets etc.), and what questions should I be asking of heating companies when I make enquiries so that I sound reasonably knowledgeable on the subject. Thanks.
 
Personally I find underfloor heating very slow to react to climate change, this is an important thing to consider as you can sometimes experience 4 different seasons in one day here. make sure that the system has good control, plenty of individual zones etc. If you are putting wooden floors down with underfloor heating you will need to purchase wood that is manufactured for that purpose.
