When you say "old style" what do you mean? Old renders were lime based and were generally a wet dash or trowel finish with a rubbed up surface.
If this is what you require any competent, experienced plaster should be able to do this for you but not all plasterers are familiar with the materials and methods of work. The Traditional Lime Company in Tullow, Co. Carlow supply the traditional materials and should be able to advise you on this. It's nice to note that these materials and methods of work are enjoying a small renaissance in popularity. Of course, maybe you are looking for something completely different!
