NIB Switch done BUT what about new DD/SO?

I got notification last week about my NIB mortgage switch / drawdown having been completed. This was followed by a letter from EBS confirming this and telling me to cancel their DD.
Despite repeated attempts this week I haven't managed to speak to my NIB contact but can I ask here - am I correct in assuming that I have to set up the new DD or SO to NIB for my first mortgage payment to them?
If yes, I assume they have to tell me exactly how much the first payment will be (I can guess or maybe use Karl's Mortgage calculator but I'd rather the figure came from the beneficiary)?
Also, do I just pick a date that suits me or does the date have to come from them also?
