Mid Week Breaks anywhere in Ireland

Hi,

I'm looking into two midweek breaks during August for myself, partner and my 18 month old. I'm from Waterford and am looking for suggestions for where to go and what's to do. I've never spent my holidays in Ireland. Was recently in Belfast and would go back, was never in Galway or the west really past Limerick, also Killarney is an option.

Basically I'm open to any ideas and any deals that are out there.

Breffy House in Castlebar are doing good ones via Lidl. Heard of 3 nights B+B for 2 adults and 2 kids 200 quid (ish). Pool there and all.
