Last minute cruise in Florida?

Hoping to go on a trip to Florida, flying into Miami and would love to go on a cruise. OH's father is very ill so might have to cancel, so was wondering if anyone has ever managed to grab a last minute?
Would you look online or book over there and if the latter how do you do it? Where do you do it?
Won the flights on Facebook so money is tight and can't afford to cancel anything as insurance does not cover pre-existing conditions.

Hi. I have used a US travel agent for booking a Med cruise. Good service and prices, plus a little extra onboard spending credit. They are www.vacationstogo.com . No connection other than a satisfied customer. Don't forget that you add US gov tax to the quoted prices. It's about $123 pp.
