I have been told that my hd ready tv (sony KDL 40W2000) is not 1080P. But on the spec sheet for the HDMI connection 4 and 5 it says: Video- 1080P,1080i, 720P, etc. Does this mean that with the right cable connected to a blu ray player or a PS3 I will get a 1080P HD picture?

HD ready 1080p logo program requires that certified TV sets support 1080p24, 1080p50, and 1080p60 formats, and feature a native resolution of 1920×1080, among other requirements.
Hooked the tv upto a ps3 with an expensive hdmi cable and it said on the screen 1080i. Although my tv has a 1080P input I have to say that it only has a 1080i output. I was sold a pup by the store i think.

Just go to the sony site and read the spec for the KDL 40W2000!
The PS3 is a complicated little machine and different games/dvds/Bllue ray discs have to be set up properly to output the highest definition possible. As per Tiger above.
AFAIK - the cheapest HDMI cables do the same job as more expensive ones. Apparently its a digital signal that's being transmitted so no need for gold-plating.
