How do answer the question " Tell me about a time when you had to plan and coordinate a project from start to finish." Or similar, if you don't actually have a job where you are responsible for projects? I am in a more supportive role, so while I do work for projects I am not solely in charge

Think about personal projects you were involved in. we all have some examples of projects in our personal lives. Even getting married, having children are projects. You could show initiative by being open on this issue and explaining while the job you were previously doing involved only being part of the process, you have ample examples in your personal life of completing projects. You are personally in charge of all of these, as we all are. Using the expression that I hate - "Think outside the box"!!
