How to track shares accumulated

Over a number of years I have opted forgo salary payments to purchase shares in a US company in which I work. I realise that the first-in first-out rule applies. I have most of the documentation but need to put it on a spreadsheet to track its value today (i.e.share price bought, USD exchange rate, stock splits, selling price, capital gains owing etc). Just not sure how to tackle it. Any advice is appreciated.

What sort of advice do you need? The data that you mentioned yourself is pretty much all you need. Make an entry in your spread sheet for each purchase. Share splits are projected back to the purchase date, i.e. treated as if you had bought the new number of shares after the split. That's it for your open positions. You don't have to account for capital gains until you actually sell. Then, use a separate part of your spreadsheet to match up sales with purchases using the FIFO rule (bearing in mind the 4-week rule in the unlikely event that it applies).
