Hot Water Tank Insulation - Problem

How can I insulate the hugh gap and is it ok to insulate over the tank thermostat as I'm concerned about safety here.

Stuffing pieces of fibreglass in doesn't seem very professional to me.

a second lagging jacket cut to suit....

its ok to cover the stat... just remember where it is ;)
 
lagging jacket are pretty poor insulation compared with a shiny new insulated cylinder
