January is the worst time to be in Madeira,Canaries and Morocco - or anywherre else within a few hours flight. Unless there are interesting towns to explore, or great scenery to drive through you could be stuck in the hotel because it's too cool and wet to go out.
Some people don't mind that if the hotel has great faciliites and good food.
And ,yes, there can be wonderful mild sunny days in any of these places and doubtless posters will write about the lovely weather they enjoyed in Agadir last year but on average the risk of rainy,windy cool days is too big to blow a lot of money on a winter holiday nearby.
Nearest best bet for luxury at a reasonable price and for a 90% chance of temperature in 20s is ,as often mentioned in these posts, the Red Sea resorts with Panorama or Falcon. But it's a five hour flight.
Anyone who says you'll get good January weather within a couple of hours flight from Ireland is telling a lenihan.
