Holiday in Caribbean book here or through UK Operator?

Hi,

Would like to go to the Carribean early next year. Can anyone advise which is best re value & choice, using an Irish Tour Operator or going online and booking through a UK company as they have a bigger market.

Also what Island do people recommend, I want to go somwhere that I can go outside to walk around, Restaurants etc.
