first holiday with new baby

Looking for suggestions for our first holiday with our new baby. She'll be 7-8 months when we're going to head come August/Sept.
As a couple we've done varly adventrous holidays to date - and a fair bit of globe trotting............but now that we've someone else to think of, we're thinking of something maybe a bit more slower paced.
Was thinking of self catering in Cornwall......are we being too cautious?? Not that there's anything wrong with Cornwall either.
Suggestions would be most welcome.
 
Wow sounds like me last September, we went to Portugal on a self catering. A lot depends on your little one. We went with another couple with a little one of 9 months, so two couples and two babies, 8 and 9 months old. Our little one loved it all, didn't mind the heat (obviously kept in the shade) loved the pool , while the other little one was upset by the heat. Different babies different tolerances. Bit of a chore to get there but worth it in the end.
 
We brought both our children on package holidays when they were just a few months old and it was well worth the extra work, especially when you consider that parents with young children aren't especially welcome in many restaurants after a certain time in Ireland.
 
Same here - we had our chisler away at 8 months, 12 months and 13 months (daddy had to stay at home for that one :() last year - Sicily, Portugal and Portugal respectively and no major problems.
