Farmers Markets

Hi what does anyone know are the legal requirements regarding setting up a hot food stall in a Farmers Market.

Do I need a Traders Licence and who grants this,
How is the food licence dealt with , as the stall would be a tented temporary kitchen and who grants this, what other considerations might there be.

AFAIK, the ones in Marley Park (sat) and the Peoples Park, Dun Laoghaire (Sun) are faciliated through the county council.
