I will be travelling to Edinburgh in the summer with a 16 and 17 year old. all the "child" ages in the hotels seem to be 0-15, do you think I could get away with sneaking the 16 in as a child? Do hotels check ages?

Why would anyone do something as dishonest as that and defraud the hotel of revenue?

I'm sure hotels are aware of all the tricks and will surely check .... so ... you'll probably have to pay what is due.

Of course ... if funding is an issue you could always downsize the holiday and hostel it!

plus don't hotel guests have to give their passports at reception when checking in for photocopying so hotels have details of guests who stayed. So they would see the teenager's age on the passport.

Could you not just use a family room at one of the chains like Premier Inn or Jurys Inn? think the price is per room rather than age of occupants.
