Cork Hotel? Help!!!

Can anyone recommend a good hotel in Cork? (It's for tomorrow so I need to be quick if possible, last minute romantic!!!) Also, anything good to do around, thinking about horse riding maybe?

Horseriding at Hitchmo's or Hop island both in the phone book I think.
Blarney castle - how about staying near the sea rather than the city - Inchadonney or Garryvoe have beautiful hotels. There is a really romantic place in Skibbereen.
