does anyone know where you could find an enjoyable fun cookery class in Dublin, in particular cooking quick healthy dishes when you come home from work......

Try some of the community schools that run weekly night classes. They will be starting up in another few weeks but you might want to register now. Sorry don't have a link.

I don't know of any in particular but always find this night courses site handy for classes in general. Good luck finding one!
