If it is laminate flooring (generally around 6 foot lengths and 6+ inches wide) then it's a straightforward job of ripping these up. There may be some beading attached to the skirting boards over this. Just remove them and start from one side, lifting the boards as you go.
The floor boards may be in a very bad condition and beyond salvaging. Problem is you won't know until all the laminate is up.
Parquet is smaller blocks of wood bonded to the subfloor, and is a bit of a nightmare to lift.
You'll need to get the chimney inspected to determine its condition. Where you intend to purchase the stove may be able to recommend someone.
