Ron, Cancun is a smallish purpose built resort and as such it's very similar wherever you go. All of the hotels appeared to be of similar (very high) quality. Certainly the one we stayed in was excellent (can't remember the name though). I think most of the hotels offer an all inclusive option. Cancun is built on a very narrow strip of land with one side facing a lagoon and the other side facing the sea. From what I can remember, the hotels facing the sea appeared more luxurious. Enjoy.
Actually, the hotel we used was 'El Pueblito' and it was fabulous.
