Can an Ex make a claim on monies that we give our son?

I can't answer you're question exactly but I do know of one case where divorce was settled & they went their separate ways. He got his career back on track & was thriving financially & guess what? Yes, She came back for a second drink from the well. Grasping much? Urrgh!
This was across more than one more jurisdiction which complicates the case & may not apply in your case but (continue to) be cautious.

Not yet. In the process, could take years. She wants half of everything, salary, pension, the works. She already has the house.

We want to help him. Now with cash gifts to help him survive. He is paying mortgage and bills on old home plus trying to rent as well. He will also inherit a decent chunk from us when we die.

You could help him with pay of some of his bills which would easy his burden.
