If you want an unbiased book, don’t waste your money on anything by Robert Fisk. If you want a good book on the history of the conflict you could try ‘The Siege’ (1989) by Conor Cruise O’Brien.
One of my favourite books is 'Oh Jerusalem' by Dominique Lapierre - it is a wonderful read.
In fact Dominique Lapierre has written/collbaorated a number of excellent other historical books:
"Is Paris Burning?"
"Freedom at Midnight"
"City of Joy" (Its a movie now as well)
amongst others.
For a start all writers come with biases of some sort.
Fisk comes from a certain political angle but is v readable esp his recent monumental work (1000 + pages) "The Great War for Civilisation" which is survey of the past 30 years or so in the Middle Easr
For a general history of Israel try Gilbert's "Israel: A History".
If you want an acount of the Arab-Israel conflict from a purely military perspective try Bregman's Israel's Wars: A History since 1947
