I am always told less is more with a CV. No long paragraphs-employers dont bother reading them-bullet points are the best.
He can start with education and outline his junior cert results and outlining what subjects he is now taking.
Presumably he doesnt have much work experience but ANYTHING he has done during his summers should be put here eg house leader in Gaeltacht?/ helping to coach more junior members of GAA/ Rugby/ Soccer/ Swimming club. Helping on farm/ building site?
Interests are very important on a CV for somebody this age. eg Sporting interests show team player and commitment.
also achievements can be another heading to include eg member of winning sports team/ debating team/ school magazine committee.
Referees can be teacher or sports coach if no previous work experience. All they will need is a character reference.
You get the jist!
Dont feel like there has to be loads on it. Anything over 2 pages is much much too long.
The CV should be accompanied by a concise letter outlining
1. Why You: Why your son has chosen this particular company to do his work experience in = make it personal to that company.
2. Why Me: Why they should chose him, what he could bring to their company.
Good luck
