With a household income of €120k and spending as follows:

Dublin rent: 1,500
Transport: 200 probably lower since I plan to start cycling to work.
Food and clothing: 1,000
Entertainment: 300
Miscellaneous: 300
Mortgage (not in Dublin): approx €900 to €1,000

What would be a good mix of long-term (5-7 years) and short-term investment (2 years)?

I'm not planning to buy a car and not paying off any huge debt.

We don't have any children and not planning to have any.

I'm not good at advising, but have you tried AIB 7.3% regular savings scheme. Seems you could start two accounts of 300Euro max each. Just a thought!

Aren't there are higher rate regular saver accounts on offer with few if any restrictions on access and higher monthly limits on deposits? See the Financial Best Buys forum lists for details of the best lump sum demand/term and regular saver deposit accounts/rates on offer.
