If as part of a settlement, there is an undertaking to not to bring legal action for a PI claim would sigining such an undertaking then stop the signer from bringing legal action. In simple terms would such an agreement be binding/enforceable?

I would imagine so. But A) why would one sign something they are not in agreement with? In all aspects of life that would be a crazy thing to do. And B) If one signs an agreement, they have to do the honourable thing and stick by it.

Usually settlements are made in such circumstances in full and final settlement of all claims including any PI claim. Usually such settlements are binding, yes, but have to be couched properly.
